

An alternative way to eat legumes simply with the beauty of a pasta dish. The ideal portion is 50 g which becomes 120 g after cooking in less than 5 minutes. Tip: cook directly in a pan, it doesn't need to be boiled in water! PER PORTION: in a shallow pan add 1/2 glass of water with a pinch of salt and a drizzle of extra virgin olive oil. As soon as it boils, throw in the "non pasta", stir and cover for a couple of minutes. You can add two vegetables or some tomato sauce. If you don't add anything that easily releases moisture, you will need to add water. Stir and season with EVO oil and whatever you prefer. It can still be boiled in water but (like everything you boil - see the vegetables themselves, it's better to steam them) you lose the goodness that (through osmosis) goes into the water; trust me, risotto it, it might take you a couple of extra minutes but it's special and will do you more good!
