

An alternative way to eat legumes with the beauty of a pasta dish. Our Eliche are lighter and more digestible because the legumes are first soaked, steamed whole, decorticated, dried, and ground. The ideal portion is 50g which becomes 120g after cooking in less than 5 minutes. Advice: cook directly in the pan, it does not need to be boiled in water! PER PORTION: in a low pan add 1/2 glass of water with a pinch of salt and a drizzle of extra virgin olive oil. As soon as it boils, toss in the "non pasta", stir and cover for a couple of minutes. You can add two vegetables or tomato sauce. If you don't add anything that releases moisture easily, you'll need to add some water. Stir and season with EVO oil and what you like. It can still be boiled in water but (like everything you boil - see the vegetables themselves, better to steam them) you lose the goodness that (by osmosis) goes into the water, trust me: risottala, it might take you a couple of extra minutes but it's special and will do you good!
