
Grandentato from il Vigneto dei Salumi is a unique tasting experience! It all started from the observation that, while working with Vinappeso, it often happened, in the early days, that the artisan laboratory in Arbizzano di Negrar had to throw away the wine used in the aging of the Giulietta or Isabella salami. But the artisan art soon made itself felt, pushing Walter Ceradini and his collaborators to carry out new and surprising experiments using precisely this particular blend that many others would certainly have discarded. A blend that is very different from the wine we are used to drinking, a rich nectar that retains all the aromas and scents of aging while maintaining the original aromatic and taste profile of the wine. A blend that contains traces of salt, a characteristic by virtue of which it has been renamed Cristallino Wine. Cristallino Wine is the product of a unique processing in the world, a blend that physically consists of Amarone and Recioto but, spiritually, of knowledge, love, and madness, that is, all those ways of being that guide and inspire the work of il Vigneto dei Salumi. An ingredient that takes the other products of the Vigneto dei Salumi line by the hand, creating something truly unique! Grandentato has a dominant aroma of licorice and a hint of tobacco on the nose. On the palate, however, the initial hint of acidity immediately gives way to savoriness and a structured melt-in-the-mouth sensation. Grandentato is obtained from the processing of the lean portion of selected heavy Italian pork coppa aged for 40-50 days in Cristallino Wine and then seasoned for 4-5 months in the cellar.
