This Monte Veronese PDO can be defined as "aged". Produced with raw cow's milk and aged 12-18 months. The rind is thin and elastic, and the paste has a color that varies from pearl white to straw yellow, especially in the summer period. It has medium-sized eyes. It smells of wildflower honey, especially in the summer period, and fresh butter. Intense and savory on the palate, it has a nice gustatory persistence with a pleasantly round finish.
