This Monte Veronese PDO can be defined as "aged". Made with raw cow's milk and aged for 12-18 months. The rind is thin and elastic, and the paste has a color that ranges from pearl white to straw yellow, especially in the summer period. It has medium-sized eyes. It smells of wildflower honey, especially in the summer, and fresh butter. Intense and savory on the palate, it has a nice taste persistence with a pleasant finish.
