The Monte Veronese PDO / Malga aged 19-24 months is a sublime, rare, and exciting cheese. With an intense yellow color, semi-cooked paste, and thick rind, it is produced only with milk from cows that graze on pasture, offering a strong and persistent flavor that cannot be forgotten. We are talking about a Slow Food Presidium: the production of the Monte Veronese PDO Presidium is linked to the ascent of herds to the pastures of Lessinia, and therefore, it must take place from the end of May until September. This cheese is one of the most important among those produced in the mountains in the Italian gastronomic landscape. La Casara won the 32nd edition of the Monte Veronese Cheese Festival, in the Monte di Malga category.
