The Speck Alto Adige IGP Squadrì by Mendelspeck is an excellence of South Tyrol, made following the ancient traditions of the region. This product is obtained from the processing of the pork leg, from which the bone and the top round are removed, and then shaped into a slightly squared form. The meat is salted and flavored with a blend of spices and natural herbs, then delicately smoked with beech wood. The subsequent aging, which lasts several months, allows for the development of a balanced flavor, with light yet distinctive smoky notes.
