Perle della Tuscia cannellini beans are grown in Italy in pristine soils. Their main characteristic is their inner core, a tender and floury pulp that is easily digestible. They are legumes rich in fiber, proteins, and minerals, and a valuable source of folic acid and vitamin B6. Here are some tips to enjoy them at their best. Rinse them several times under running water and soak them for half a day, about 8-10 hours. Cook them in cold water for 60-90 minutes, or if you prefer to save time, use a pressure cooker and they will be ready in just 20 minutes from the first whistle. Please, do not salt them during boiling, otherwise the skin will crack and the pulp will be hard. I recommend enjoying them plain, with just salt and extra virgin olive oil, or to make delicious salads and hot soups, or even as a meat substitute. Available in a recyclable 400g package.
