Lactose-free mozzarella is made with lactose-free milk from our buffaloes, lactose-free milk, salt, and rennet. The milk used is the same as that used to produce traditional buffalo mozzarella, which is why the flavor is identical. The difference occurs during production when the milk is lactose-free. It is available in round, aversana, bocconcini, bocconi, or braided forms, ranging from a minimum of 100 g up to a maximum of 3 kg, available exclusively on order. To enjoy it best during particularly cold periods, since mozzarella expresses its aromas best when consumed at about 28-30 °C, we recommend gently warming it in the microwave at 600 watts for about 15 seconds or, if preferred, immersing the entire bag in warm water for about 15 minutes.
